(Arepa filled with Chicken and Avocado Salad)

- 10-12 arepas prepared with P.A.N. Pre-cooked White Corn Meal

- 4 chicken breasts

- Mixed leafy greens (scallion, leek, cilantro, celery)

- 4 cups water

- 2 ripe avocadoes

- Juice from ½ lemon

- 1 cup mayonnaise

- 1 tablespoon mustard

- 1 teaspoon Worcestershire sauce

- 1 tablespoon cilantro, chopped

- Salt and pepper to taste


  1. Cook chicken in a pot with 4 cups water and vegetables. Once cooked, shred the chicken into small pieces.
  2. Smash 1 ½ avocadoes with a fork or potato masher, add lemon juice and immediately mix with shredded chicken. Place aside the other ½ avocado for decoration.
  3. Mix mayonnaise, mustard, Worcestershire sauce, salt and pepper in a bowl. Then, combine with the  chicken and avocado mixture.
  4. Place the mix in a platter or bowl and decorate with avocado slices.
  5. Fill each arepa with a portion of mix and some avocado slices.
