Strawberry Cobbler

- 2 ¼ lb strawberries, raspberries or blackberries

- ¾ cup sugar

- Lemon zest



- ¾ cup P.A.N. Sweet Corn Mix

- ½ cup rice flour

- ¼ cup sugar

- 3.5 oz butter, cold and cut in squares

- 1 teaspoon salt


  1. Pre-heat the oven to 325 °F.
  2. Mix berries with sugar and lemon zest in a baking mold. Set aside.
  3. Place P.A.N. Sweet Corn Mix, rice flour, sugar and salt in a food processor. Press two or three times to mix.
  4. Add butter and press two or three times more, leaving some lumps. Pour the mixture over the fruit and spread it on the surface.
  5. Bake for 30 minutes or until the fruits are tender and the dough is golden brown. Serve hot.
