Two-Cheese Cornbread

Ingredients

- 1 ½ cups P.A.N. Sweet Corn Mix

- ½ cup all-purpose flour

- 5 tablespoons unsalted butter, melted

- 4 tablespoons sugar

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1 teaspoon salt

- 3 eggs

- 1 cup cheddar cheese, grated

- 1 cup white cheese, grated

- 1 cup buttermilk

- ¼ cup milk

- A pinch black pepper

Preparation

  1. Pre-heat oven to 400 °F. Grease a baking mold with butter and sprinkle flour. Set aside.
  2. Mix P.A.N. Sweet Corn Mix, flour, sugar, baking powder, baking soda, salt and pepper in a bowl. Add the eggs, slightly beaten, buttermilk, melted butter and milk. Mix until well combined. Add the cheeses and mix again.
  3. Pour batter in the mold and bake for approximately 25 minutes. Insert a toothpick to make sure it is ready, it should come out clean.
  4. Serve warm as a side for breakfast.
