Corn Chips & Dip

- 1 cup P.A.N. Pre-cooked White Corn Meal

- 1 ¼ cups water

- ½ teaspooon salt

- Pepper to taste



- ½ butternut squash

- 3 garlic cloves, peeled

- 2 tablespoons extra virgin olive oil

- 3 tablespoons tahini

- 1 tablespoon harissa

- ½ lb chickpeas, cooked and drained

- ¼ cup lemon juice

- Salt to taste


  1. Pre-heat oven to 360 °F. Peel butternut squash and cut into pieces. Place on a baking sheet and bake for 30 minutes or until tender.
  2. Place the squash with the rest of the ingredients in a blender and process until a thick cream is formed.
  3. Pour the mixture into a bowl and let it cool.
  4. Place water, salt and pepper in a separate bowl. Slowly add P.A.N. Pre-cooked White Corn Meal and stir until homogeneous. Set aside for 5 minutes.
  5. Divide the dough into 15-20 equal portions and form balls. Place each portion on a grill over medium-high heat, close and cook for 10 minutes or until crispy.
  6. Remove from the grill and serve accompanied by the dip.
