Arepa filled with Chorizo, Cheese and Corn

- 8 arepas prepared with P.A.N. Pre-cooked White Corn Meal

- 1 tablespoon butter

- 12 chorizos, chopped

- 2 tablespoons oil

- 1 cup scallion, finely chopped

- 1 cup tomato, finely chopped

- 9 oz. cooked corn kernels

- 2 cups soft white cheese, grated

- Salt and pepper to taste


  1. Melt butter in a pan and cook the chorizos until well done.
  2. Pour oil in another pan over medium heat and sauté the scallion and tomato until soft and juicy. Add salt and pepper to taste.
  3. Slice open each arepa lengthwise, creating a pocket, and very carefully and fill with a portion of chorizo, vegetables, corn, and cheese. Serve immediately.
