BBQ Pulled Pork Hot Pocket

Ingredients

For the dough:

2 cups P.A.N. Pre-cooked Yellow Corn Flour

2 ½ cups water

2 tablespoons vegetable oil

2 teaspoons celery salt

1 teaspoon mustard powder

1 teaspoon sugar

Oil for frying

For the filling:

2 ½ cups bbq pulled pork

Preparation

For the dough:

  1. In a bowl, combine the water, oil, mustard powder and celery salt.  Add the P.A.N. Pre-cooked Yellow Corn Flour and knead. Let sit for 2 minutes. Knead for 2 more minutes. Cover and set aside.

Assembly:

  1. Divide the dough into 10-12 equal-sized portions and shape into small balls. Cover the counter with plastic wrap and flatten the dough into ¼-inch thick circles. Place a spoonful of the pulled pork onto one side of the disk, fold the dough over the filling to make a half-moon and seal the edges. Using a round cutter, trim the edges.
  2. Fry the hot pockets in plenty of hot oil until golden.

Transfer to paper towels to drain and serve hot.
