Peanut Butter and Chocolate Sandwiches

Ingredients

For the dough:

2 cups P.A.N. Pre-cooked White Cornmeal

14 tablespoons (1 stick + 6 tablespoons)

¾ cup cocoa powder

2 teaspoons baking powder

2 teaspoons baking soda

¾ cup sugar

3 eggs

2 cups buttermilk

1 teaspoon vanilla extract

1 teaspoon salt

For the filling:

1 ½ cups peanut butter

Preparation

For the dough:

  1. Preheat the oven to 375ºF. Cover 2 baking trays with wax paper.
  2. Sift together the cocoa powder, baking soda and baking powder and then add the P.A.N. Pre-cooked White Cornmeal and the salt. Set aside.
  3. Using an electric mixer, cream the butter and the sugar. In a separate bowl, combine the buttermilk and the vanilla extract. Add the eggs one at a time to the butter mixture. Next, alternate between adding the dry ingredients and the buttermilk mixture to the butter mixture.
  4. Using an ice cream scoop, scoop balls of the dough, approximately 1 ½ inches in diameter, onto the tray leaving at least 1 inch between each scoop.
  5. Bake for 15 minutes. Let cool completely.

Assembly:

  1. Spread a bit of the peanut butter on half of the cookies and cover with another cookie to make a sandwich.
