P.A.N. Brownies for Saint Patrick's Day

Ingredients

½ cup P.A.N. Pre-cooked White Corn Meal

⅔ cup water

A pinch of salt

4 medium eggs

1 ½ cups sugar

1 cup (2 sticks) butter at room temperature

1 cup dark couverture chocolate, melted

¼ cup cocoa powder

1 teaspoon baking powder

Cocoa powder to dust the pans

7 ounces white chocolate for decoration

Green gel paste or oil-based natural food coloring
Chopped walnuts (optional)

Preparation

  1. Preheat the oven to 355°F. Grease a baking pan and sprinkle with cocoa powder. Set aside.
  2. In a bowl, combine the water and salt. Gradually add the P.A.N. Pre-cooked White Corn Meal until combined. Set the batter aside.
  3. In a separate bowl, beat the eggs, sugar and cocoa powder until creamy. Set aside.
  4. Using an electric mixer, combine the butter and baking powder. Next, slowly add the batter. Combine the couverture chocolate with the egg mixture and the chopped walnuts (optional). Beat until thoroughly combined. Pour the mixture into the greased pan.
  5. Bake for 30-40 minutes. Remove from the oven and let sit before removing from the pan.
  6. Melt the chocolate using a bain marie and add the green food coloring until you obtain the desired color.
  7. Decorate with the colored chocolate to your liking.
