Strawberry Muffins

1 cup P.A.N. Pre-cooked Yellow Corn Flour

1 cup almond flour

¼ cup cornstarch

1 cup brown sugar

½ cup (1 stick) butter at room temperature

4 eggs

2 teaspoons baking powder

½ teaspoon lemon zest

½ teaspoon salt

2 cups strawberries, quartered

½ cup granulated sugar


  1. For the jam: In a pot, combine the strawberries and the sugar and cook on medium heat for 10 minutes. Let cool and set aside.
  2. Preheat the oven to 355°F. Grease a muffin pan with butter and sprinkle with P.A.N. Pre-cooked Yellow Corn Flour.
  3. In an electric mixer, cream the room-temperature butter and the sugar together. Add the eggs one at a time until thoroughly combined and smooth. Add the lemon zest.
  4. Add the P.A.N. Pre-cooked Yellow Corn Flour, baking powder, corn starch, salt and almond flour to the mixture and blend until thoroughly combined. Set aside.
  5. Using a spatula, fold in half of the strawberries.
  6. Pour the batter into the muffin pan and bake for 30 minutes or until golden.
  7. Remove from the oven and let cool before removing from the pan. Cover with the strawberry jam.
