Fried Amish Cornmeal Mush

2 cups P.A.N. Pre-cooked Yellow Corn Flour

5 cups water

Salt and pepper to taste

Vegetable oil for frying

Maple syrup for serving


  1. In a pot, boil the water with a bit of salt and gradually add the P.A.N. Pre-cooked Yellow Corn Flour. Blend with a whisk until thoroughly combined and thick.
  2. Pour the polenta into a baking pan greased with oil and, using a spatula, spread the mixture evenly until it is 1-1 ½-inch thick. Let cool completely.
  3. In a pot, heat the vegetable oil to 355ºF. Cut the polenta into rectangles or squares and fry until golden.
  4. Remove from the oil and transfer to paper towels to drain. Serve with maple syrup.
