Crackling Cornbread

Ingredients

1 ½ cups + 2 tablespoons P.A.N. Pre-cooked Yellow Corn Flour

2 cups + 3 tablespoons (4 sticks + 3 tablespoons)

2 pounds fresh corn

½ cup + 3 tablespoons cream

3 ounces whole milk

½ cup + 2 tablespoons eggs

1 cup cornmeal

1 ½ cups sugar

2 teaspoons salt

½ tablespoon baking powder

½ teaspoon baking soda

7 ounces pork crackling

Preparation

  1. Preheat the oven to 355°F.
  2. In a cast iron pan, melt the butter on high heat. Add the corn and stir constantly, making sure it does not stick to the pan and burn. Once cooked, remove from the heat and set aside.
  3. In a bowl, combine all of the dry ingredients, except for the pork crackling. In another bowl, combine all of the wet ingredients.
  4. Roughly chop the pork crackling.
  5. Combine the butter and corn with all of the wet ingredients. Slowly add the dry ingredients until combined. Add the pork crackling and blend again. Don't worry if the dough is a bit lumpy.
  6. Return the mixture to the pan and bake for 20-25 minutes or until the bread reaches an internal temperature of 380ºF. It can also be baked in individual molds.
