Cornmeal Spaetzle

Ingredients

1 cup P.A.N. Pre-cooked Yellow Corn Meal

1 ½ cups all-purpose flour

1 cup milk

¼ cup ricotta cheese

3 eggs

Salt and pepper to taste

To serve:

4 tablespoons (½ stick) butter

Fresh sage leaves

Preparation

  1. In a pot, boil enough water to cook the spaetzle. The water should be boiling when the mixture is ready.
  2. In an electric mixer with the wire whisk attachment, combine the P.A.N. Pre-cooked Yellow Corn Meal, flour, salt and pepper to taste. In a separate bowl, whisk together the eggs, milk, and cheese. Add the wet ingredients to the dry ingredients and whisk for 2 to 3 minutes until thick and pliable.
  3. In a large pan, melt the butter and add the sage leaves. Set aside.
  4. Set a large-holed sieve directly over the boiling water. Ladle the mixture into the sieve in batches, using a silicon spatula to press the mixture through the sieve. Cook until they float to the surface, approximately 1 minute.
  5. Remove the spaetlze from the water using a skimmer and place them directly into the pan with the butter and sage. Repeat with the entire mixture. Season with salt and pepper to taste.
