Cornbread Topped with Apples and Caramelized Onions

Ingredients

1 ¼ cups P.A.N. Pre-cooked Yellow Corn Flour

¾ cup all-purpose flour

½ cup honey

1 ½ tablespoons baking powder

1 teaspoon baking soda

1 teaspoon salt

10 tablespoons (1 stick + 2 tablespoons) butter

3 large eggs

2 ¾ cups buttermilk

For the apples and onions:

3 red apples, cut into wedges

2 medium onions, sliced into half-moons

2 tablespoons butter

2 tablespoons balsamic vinegar

1 tablespoon sugar

Preparation

For the apples:

  1. In a pan, heat the butter and sauté the onions until they are translucent and very soft. Remove from the pan. Add the apples to the same pan and cook until they are a bit soft. Add the balsamic vinegar and the sugar. Cook until a syrup has formed. Add the onions and mix well. Set aside.

For the cornbread:

  1. Preheat the oven to 355°F.
  2. In a bowl, combine the P.A.N. Pre-cooked Yellow Corn Flour, wheat flour, baking powder, baking soda and salt. Set aside.
  3. In another bowl, combine the honey, eggs and buttermilk. Stir the dry ingredients into the mixture until the batter is thoroughly combined.
  4. Heat the cast iron pan on the stove and melt the butter. Let the butter bubble on medium-low heat until it is slightly brown, but not burnt. Add the butter to the mixture and blend well.
  5. Pour the mixture into the cast iron pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Spoon the apple and caramelized onion mixture over the cornbread and serve warm.
