Special occasions deserve to go with the perfect meal

P.A.N. Candy Cane Brownies

½ cup P.A.N. Pre-cooked White Cornmeal

1 teaspoon baking powder

¼ cup cocoa powder

A pinch of salt

1 cup (two sticks) butter at room temperature

1 ½ cups sugar

4 medium eggs
1 cup dark couverture chocolate, melted

⅔ cup water

1 teaspoon instant coffee

1 cup walnuts (optional)

1 cup chocolate chips (optional)

2 cups candy canes, broken into pieces

Cocoa powder to dust the pan


  1. Preheat the oven to 355°F. Grease a baking pan and cover the bottom with wax paper. Sprinkle the sides with cocoa powder. Set aside.
  2. In a bowl, combine the P.A.N. Pre-cooked White Cornmeal, baking powder, salt and cocoa powder.
  3. In a food processor, beat the butter until soft. Add the sugar and continue to beat. Add the eggs one at a time until thoroughly combined.
  4. Combine the water and the instant coffee.
  5. Add half of the P.A.N. Pre-cooked White Cornmeal mixture to the egg mixture. Add half of the water and coffee mixture and blend well. Add the remaining flour and when combined, add the remaining water.
  6. Add the couverture chocolate and beat until thoroughly combined.
  7. If you want, fold in the walnuts and the chocolate chips.
  8. Pour the mixture into the pan and place the candy canes pieces on top.
  9. Bake for 25-30 minutes. Remove from the oven and let sit before removing from the pan.
