Corn Flour and Cheddar Biscuits with Gravy

Ingredients

¾ cup P.A.N. Pre-cooked Yellow Corn Flour

1 cup wheat flour

3 tablespoons baking powder

10 tablespoons (1 stick + 2 tablespoons) cold butter, sliced

1 egg

½ cup buttermilk

1 teaspoon salt

1 cup cheddar cheese, grated

2 cups turkey gravy 

Preparation

  1. Using a food processor, combine the P.A.N. Pre-cooked Yellow Corn Flour, wheat flour, baking powder and salt. Add the cold butter and pulse until the mixture is crumbly.
  2. Add the cheddar cheese, buttermilk, milk and egg and pulse until a ball of dough is formed. Remove from the food processor and press it together with your hands.
  3. Preheat the oven to 355ºF and grease and then flour a baking tray.
  4. Flour the counter and very gently roll out the dough with a rolling pin. Cut with a biscuit cutter and place the biscuits on a tray.
  5. Bake for 15-18 minutes or until the edges are slightly golden.
  6. Serve hot covered in gravy.
