Upside-Down Banana Cake

¾ cup P.A.N. Sweet Corn Mix

6 bananas

⅓ cup brown sugar

1 tablespoon lemon juice

¾ cup wheat flour

⅓ cup granulated sugar

1 teaspoon vanilla extract

2 teaspoons baking powder

¼ teaspoon salt

¼ cup vegetable oil

1 egg

¾ cup milk 


For the dough:

  1. Preheat the oven to 375ºF. Flour an 8-inch cake pan. Set aside.
  2. In an electric mixer, combine the P.A.N. Sweet Corn Mix, wheat flour, granulated sugar, baking powder, salt and mix until blended. In a separate bowl, whisk together the eggs, milk, vanilla extract and oil. Stir the dry ingredients into the mixture until thoroughly combined.

For the bananas:

  1. Slice the bananas in rounds. In a pan on medium heat, heat 2 tablespoons of butter and add the bananas, brown sugar and lemon juice. Stir occasionally until the liquid is reduced, approximately 4-5 minutes.
  2. Arrange the bananas in the springform pan, covering the entire surface. Pour the mixture over the bananas and bake until golden, approximately 20-25 minutes. Remove from the oven and unmold by running a small knife around the inside of the pan.
