Ingredients

- 3 cups P.A.N. Sweet Corn Mix

- 8 oz butter

- 6 egg yolks

- 6 egg whites

- 1 cup sugar

- 1 cup buttermilk

- 1 teaspoon vanilla extract

- Lemon zest

 

Topping:

- ½ cup cream cheese

- ½ cup butter at room temperature

- 1 ½ cups powdered sugar

- 1 teaspoon vanilla extract

- Food coloring (optional)

Preparation

  1. Pre-heat the oven to 390 °F. Grease a baking mold for cupcakes and sprinkle flour. Set aside.
  2. Cream butter with an electric mixer. Then, add sugar, vanilla extract and lemon zest. Finally, add egg yolks one by one.
  3. Add half 1 ½ cups P.A.N. Sweet Corn Mix and ½ cup buttermilk in a bowl and mix until well combined. Then, add the rest of both ingredients.
  4. Whisk egg whites until soft peaks in a separate bowl and incorporate softly to the previous mixture.
  5. Pour the batter in the molds and bake for 25-30 minutes.
  6. Set aside and unmold.
