Cornbread Dressing

- 5 cups cornbread prepared with P.A.N. Pre-cooked Yellow Corn Flour, finely chopped (almost into crumbs)

- 1 onion, diced

- 2 celery stalks, diced

- 4-5 fresh sage leaves, cut into fine strips

- 2 eggs, lightly beaten

- 1 cup vegetable, chicken or turkey stock

- 6 tablespoons butter


  1. In a pan, melt 2 tablespoons of the butter, add the onion and sauté until clear and slightly golden. Add half of the stock and scrape the sides of the pan. Remove from the heat and set aside.
  2. Melt the rest of the butter. In a bowl, combine the cornbread, eggs, melted butter, sage, celery and sautéed onions with the remaining butter and stock. Thoroughly combine and season with salt and pepper. If necessary, add more stock. It should be moist but not overly so.
  3. Preheat the oven to 355°F.
  4. Pour the mixture into a heat-resistant dish and bake for 30 minutes until the surface is entirely golden.
