Zucchini And Bacon Cornbread

- 1 ¾ cups P.A.N. Pre-cooked Yellow Corn Flour

- 1 cup all-purpose flour

- ½ cup honey

- 2 tablespoons baking powder

- 1 teaspoon baking soda

- 1 teaspoon salt

- 10 tablespoons butter

- 3 large eggs

- 2 ½ cups buttermilk

- 8 bacon strips

- 2 zucchinis, grated (spun-dry, no liquid)


  1. Preheat the oven to 355°F.
  2. In a bowl, combine the P.A.N. Pre-cooked Yellow Corn Flour, wheat flour, baking powder, baking soda and salt. Set aside.
  3. In another bowl, combine the honey, eggs and buttermilk. Stir the dry ingredients into the mixture until thoroughly combined.
  4. In a pot, melt the butter and cook on medium-low heat until slightly browned, but not burnt. Remove from the heat, add to the batter and mix well.
  5. Cook the bacon in the microwave until crisp. Cut the bacon into small pieces and add it to the batter along with the grated zucchini.
  6. Bake for 35 minutes.  Let sit and serve warm.
