Cornbread Croutons

Ingredients

Cornbread:

- 1 ½ cups P.A.N. Pre-cooked White Cornmeal

- 1 cup wheat flour

- ½ teaspoon salt

- 3 tablespoons sugar

- 3 teaspoons baking powder

- 1 ½ cups milk

- 1 tablespoon lemon juice

- 2 eggs

- ½ cup vegetable shortening, melted 

 

Croutons:

- ¼ cup olive oil

- 1 teaspoon garlic powder

- 2 tablespoons chopped parsley

 

Preparation

Cornbread:

  1. Preheat the oven to 430°F. Grease a baking pan with butter and sprinkle with flour. Set aside.
  2. In a bowl, combine the P.A.N. Pre-cooked White Cornmeal, flour, salt, sugar and baking powder. Add the milk, lemon juice, eggs, shortening and mix until the batter is thoroughly combined.
  3. Pour the mixture into the baking pan and bake for 20-22 minutes. Remove from the oven, let sit for 10 minutes and remove from the baking pan. Let cool.

Croutons:

  1. Cut the cornbread into 1-inch squares. Place the squares on a baking tray.
  2. In a bowl, combine the oil, garlic and parsley. Drizzle the mixture over the cornbread, doing your best to cover all of the squares.
  3. Bake for 10-15 minutes, flipping them half-way through so they are crispy on all sides.
  4. Serve with your favorite soup or salad.
