Butter And Lemon Cookies

Ingredients

- 1 ¼ cups P.A.N. Pre-cooked Yellow Corn Meal

- 1 ¼ cups all-purpose flour

- ¾ cup powdered sugar

- 1 cup butter

- 1 egg

- ½ teaspoon vanilla extract

- ½ lemon zest

- ½ teaspoon salt

Preparation

  1. Blend sugar and butter with a mixer until completely integrated. Add vanilla extract, the egg and lemon zest.
  2. Gradually add P.A.N. Pre-cooked Yellow Corn Meal, flour and salt. Incorporate all the ingredients until homogeneous and compact.
  3. Divide the batter in 2 equal portions and make 2 inch thick logs using waxed paper or parchment paper. Refrigerate for 2 hours.
  4. Pre-heat the oven to 350 °F and cover a baking tray with parchment paper. Set aside.
  5. Take the logs out from the refrigerator, remove the paper and cut ¼ inch cookies with a knife.
  6. Place the cookies in the baking tray and bake for 12-15 minutes, until the edges are lightly golden brown.
