Ingredients

- 1 cup P.A.N. Pre-cooked White Corn Meal

- ¾ cup rice flour

- ¼ cup cornstarch

- ½ teaspoon salt

- 1 teaspoon baking soda

- 1 tablespoon ground ginger

- ½ teaspoon ground nutmeg

- ½ teaspoon ground cinnamon

- ½ cup margarine

- ½ cup brown sugar

- 1 egg

- ½ cup honey

- ¾ cup water, warm

Preparation

  1. Pre-heat oven to 350 °F. Grease a baking tray with butter. Set aside.
  2. Mix rice flour, cornstarch, P.A.N. Pre-cooked White Corn Meal, salt, baking powder, ginger, nutmeg and cinnamon in a bowl. Set aside.
  3. Whisk butter, sugar and the egg in a separate bowl until creamy and smooth. Add honey and water.
  4. Add the flour mixture stirring constantly until even.
  5. Strain the dough over a parchment paper on a flat surface with a rolling pin to form ¼ inch base. Cut with a cookie cutter, place the figures on the tray and bake for 40 minutes or until golden brown.
  6. Remove from the oven. Let it cool before serving.
