Apple Pie

- 1 cup P.A.N. Pre-cooked White Corn Meal

- ¼ cup cornstarch

- ¼ cup rice flour

- 1 teaspoon ground linseed

- 1 teaspoon salt

- 2 tablespoons sugar

- ½ cup butter, cold and cut in cubes

- 4 tablespoons water, cold



- 5 medium Granny Smith apples, peeled and cut in slices

- 1 tablespoon lemon juice

- ½ teaspoon ground cinnamon

- ¼ teaspoon salt

- ¼ teaspoon ground nutmeg

- ¼ cup brown sugar



- 2 tablespoons apple compote

- 1 ½ tablespoon sugar


  1. Pre-heat the oven to 350 °F. Mix P.A.N. Pre-cooked White Corn Meal, cornstarch, rice flour, linseed, salt and sugar in a food processor at a high speed for 3 minutes.
  2. Turn to medium speed and carefully add butter cubes.
  3. Slowly add water and stir until well combined. Place the dough in a plastic bag and refrigerate for 30 minutes.
  4. Mix the apples, lemon juice, cinnamon, salt, nutmeg and brown sugar in a separate bowl. Set the mixture aside covered with a cloth.
  5. Remove the dough from the refrigerator and divide it in 2 equal portions. Strain each portion between 2 parchment papers forming ⅛ inch discs. Place one of the discs in a pie baking mold using the paper.
  6. Remove the paper, fill the mold with the apple mixture and cover with the other disc.
  7. Decorate the surface with the compote and sprinkle with sugar.
  8. Puncture holes with a fork on the surface so the steam can escape. Bake for 40 minutes or until golden brown.
  9. Remove from the oven and let rest before serving
