Special occasions deserve to go with the perfect meal

Pumpkin Pie

- 1 cup P.A.N. Pre-cooked Yellow Corn Meal

- ½ cup almond flour

- 2 tablespoons sugar

- ½ teaspoon salt

- 6 ¼ tablespoons butter, cold and diced

- 2 egg yolks

- 2 tablespoons cold water



- 2 cups pumpkin puree

- 1 cup brown sugar

- ¾ cup milk

- 3 eggs

- 2 tablespoons P.A.N. Pre-cooked Yellow Corn Meal

- 1 teaspoon cinnamon

- 1 teaspoon ginger powder

- ½ teaspoon cloves powder

- ½ teaspoon all spice (guayabita)

- 1 teaspoon salt


Whipped cream:

- 1 cup heavy cream, really cold to whip

- 4 tablespoons powdered sugar

- 1 teaspoon vanilla extract

- Cinnamon powder to sprinkle


  1. Mix P.A.N. Pre-cooked Yellow Corn Meal, almond flour and salt in a bowl. Sift with a fine sieve.
  2. Incorporate the butter with your fingertips. Slowly add water, until it forms a compact dough. Set aside.
  3. Pre-heat the oven to 400 °F.
  4. Spread the dough over parchment paper so the dough is 1 inch bigger than the mold. With help of the paper, flip the dough and cover the mold completely. Adjust the dough to the surface with your fingers and cut any left overs.
  5. Bake for 20 minutes or until the edges turn golden brown.

  1. Blend all the ingredients in a food processor until there are no lumps.

Set up:

  1. Pour the pumpkin mixture on the baked crust and bake for 20 more minutes. Try the mixture by inserting a knife, if it comes out wet bake for 10 more minutes.
  2. Remove from the oven and let it cool.
  3. Whip the heavy cream with powdered sugar with a manual whisk until it doubles its volume. Add vanilla extract and whip some more.
  4. Garnish every piece of pie with the whipped cream and sprinkle cinnamon powder on top.
