Peanut Butter Brownies

Ingredients

- ½ cup P.A.N. Pre-cooked White Corn Meal

- ⅔ cup water

- A pinch of salt

- 4 medium eggs

- 1 ½ cups sugar

- 1 cup (2 sticks) butter at room temperature

- 1 cup couverture chocolate, melted

- ¼ cup cocoa powder

- 1 teaspoon baking powder

- Cocoa powder to dust the pans

 

Peanut butter cream:

- ¾ cup peanut butter

- ¼ cup powdered sugar

- 3 tablespoons butter

Preparation

  1. Pre-heat the oven to 355 °F. Grease a baking pan and sprinkle with cocoa powder. Set aside.
  2. Combine water and salt in a bowl. Gradually add P.A.N. Pre-cooked White Corn Meal until well incorporated. Set the batter aside.
  3. Whisk together the sugar and eggs until creamy in a separate bowl. Set aside.
  4. Using an electric mixer, combine butter and baking powder. Then, slowly add the previous batter. Add the couverture chocolate and the egg mixture.
  5. Beat until thoroughly combined. Pour ¾ of the mixture into the greased pan and spoon equal-sized portions of the peanut butter  over the surface of the brownies. Cover with the rest of the batter and drizzle the remaining peanut butter over the top to create a marble-like appearance.
  6. Bake for 30-40 minutes. Remove from the oven and let it rest before unmolding.
